What is MOV?
MOV is Apple's QuickTime video format and the format iPhones record in. It holds the video together with an audio track, usually AAC. Extracting that track gives you the sound of a recording, interview or performance as a normal audio file.
What is MP3?
MP3 is the most widely supported audio format in the world. It uses lossy compression to make files roughly a tenth the size of uncompressed audio. At 192 kbps or higher most listeners cannot tell it apart from the original.
